Today I’m bringing along a very delicious dessert which you can prepare literally in minutes! Eton mess is a well known and one of best-loved British desserts, containing of fresh berries (strawberries are most common), meringues and whipped cream. I’ve cheated a bit and simplified it even more, plus made it healthier - I’ve substituted the heavy cream for natural yogurt. Must I say that it’s also an absolute joy to eat? 🙂
By the way, the taste was still beautiful with natural yogurt, and the dessert came out to be quite healthy and light. Although it’s amazing even with the heavy cream! 🙂
The recipe serves 2 (using 170 ml tumblers).
- 100 g fresh berries (I used strawberries and blueberries (1)
- 20 g sugar
- 50 g meringues
- 120 ml natural yogurt
- 20-30 ml lemon curd (optional)
- 50 g blueberries (2)
- handful unsalted pistachio kernels, chopped
- few fresh berries, meringues and fresh mint leaves for decoration
The berries, yogurt and lemon curd must be well chilled, if you intend to serve the dessert immediately. Or you may omit it and chill it well before serving instead.
Roughly mash the berries (1) with a fork. Add the sugar, mix, st aside. Crumble the meringues. Mix yougurt with the meringue crumbs and lemon curd (if using). Add the mashed berries and mix roughly. You want the mixture to stay uneven with bright berry inclusions.
Put some of the yogurt and berry mixture on the bottom of the tumblers, top with an even layer of fresh berries (2), followed with chopped pistachios. Repeat one more yogurt and berry layer, topped with the fresh berries and chopped pistachios. Put the remaining yogurt mixture on top, level it down.
Decorate with 1-2 whole and crumbled meringues, chopped pistachios, fresh berries and fresh mint leaves.
